May is National Egg Month. That means an entire month dedicated to the many virtues of what could be called one of nature’s miracle foods.
Eggs have been described by nutritionists as nature’s large vitamin pill or a mineral cocktail because they contain many of the essential vitamins and minerals required for a healthy diet. At around 78 calories each and five grams of fat, eggs provide high-quality protein, containing all the essential amino acids our bodies need in a near-perfect pattern. In fact, the quality of egg protein is so high that scientists frequently use eggs as the standard for measuring the protein quality of other foods. An average hen lays about 300 to 325 eggs per year. An average American eats about 276 eggs per year.
National Egg Month is celebrated in May to declare and remind people that eggs aren’t just an Easter thing, but a nutritional food that can be enjoyed all year long.
