It’s the beginning of a new year and there are a lot of New Year’s resolutions centering around the words diet, weight loss, fitness and healthy eating. If it’s carbs you’re giving up or even cutting back on, why not crush those weight loss goals this time around, by considering some “breadless” alternatives. Some of these ideas may already be growing in your very own backyard.

Make a cucumber Subs – using the cucumber as the top and bottom of your sandwich. Simply cut it in half and add your favorite sour cream or cream cheese and deli meat in the middle. Or Lettuce wraps – whether you prefer iceberg or green leafy lettuce. Layer on your favorite protein and filling wrap them with the lettuce into rolls.

Red Bell pepper sandwich. Just like you would the cucumber, cut in half and layer your favorite meat and sandwich filling. Or, stuff the pepper with your favorite protein and rice.  You might also try making that next sandwich favorite with Paleo sweet potato buns. These are naturally sweet-tasting, and their natural sugars are slowly released into the bloodstream, helping to ensure a balanced and regular source of energy preventing the unwanted blood sugar spike. Grilled eggplant sandwich is another good one. You can use Eggplant as hamburger buns, too. Gluten free tapioca wraps or Plantain tortillas – could also be a healthy replacement for standard flour or corn tortillas.
