You would be surprised at some of the printed stuff that comes across my desk. I try to read it all but sometimes I just give up. Here is an example. What is the favorite cut of beef served on the dinner table? A group of recognized chefs are currently doing their own study. They haven’t reached a conclusion yet but here is what they did conclude. It depends on the time of year. If it is cooked on the grill unquestionably it is the ribeye steak. But winter months slows the use of the grill. And when the cooking moves inside so it is the chuck roast. I am anxious to see the conclusion to this study. What part does seasoning play? And good meat any cut has to be cooked at the proper temperature. They all agreed on that. Right now, the most purchased of a cow is still…hamburger meat.
