Now it is common knowledge with current red meat prices where they are, Americans are eating more chicken. This is good news for poultry farmers, of course. Americans eat chicken 10 to 12 times a month. That is more than 50 pounds per year. So what is your guess? More white meat or dark meat? And does it make any difference in nutritional value? Well, nutritionists say it is simply a matter of choice. More people prefer white meat. So the choice is based on color, not taste, or nutrition. So guess what? Food scientist are now working on a way to remove the color from dark meat. Lot of science involved here, but my question is what influence does muscle have to do with personal preference? That is what determines my choice. Maybe it does yours too.
