Meat Processors

The American Association of Meat Processors (AAMP) is set to kick off its annual convention tomorrow in Kansas City, drawing more than 1,600 processors from across the country. As the largest trade organization representing both small and large-scale meatpacking professionals, AAMP continues to honor its historic roots while addressing today’s most pressing challenges in food safety and security.

Honoring a Legacy Since the 1930s

Founded in the 1930s, the AAMP was born during an era when nearly every rural town in America had its own local butcher and meat locker. While the landscape of the meat industry has evolved, AAMP’s mission remains steadfast—supporting small and medium-sized processors across the nation. Despite the decline of local meat lockers in small towns, AAMP continues to serve as a vital advocate for these businesses, ensuring their voices are heard on both state and national levels.

Food Safety and Security Take Center Stage

Food safety has long been a pillar of the U.S. meat and poultry processing industry. In recent years, however, the focus on food security and public health has intensified. Just last week, U.S. Secretary of Agriculture Brooke Rollins underscored that commitment by attending the ribbon-cutting ceremony for the new USDA Midwestern Food Safety Laboratory near St. Louis.

This state-of-the-art facility—backed by a billion-dollar federal investment—aims to enhance the nation’s ability to detect, monitor, and respond to foodborne illnesses and other safety threats in the meat supply chain.

Celebrating Industry Leaders and Innovators

As part of the AAMP Convention, the association will introduce its latest Hall of Fame inductees—recognizing individuals whose contributions have shaped the meat processing industry. Past inductees include icons like Kenny Monfort, country music legend and sausage entrepreneur Jimmy Dean, and renowned animal welfare expert Temple Grandin.

Conclusion: Industry Optimism Amid Innovation

With a renewed focus on food safety and a strong turnout of processors, the 2025 AAMP Convention reflects a resilient and forward-looking meat industry. As members gather in Kansas City, they not only celebrate their history but also embrace the technologies and policies that will drive future growth.

From honoring legends to pioneering lab advancements, the American meat processing industry remains grounded in tradition—yet boldly moving forward.
