Whenever you hear Chia, you might instantly think of those terra-cotta figurines that sprout greens in a matter of weeks. It’s true, those same seeds used with those cute gift ideas are the same ones gaining popularity as a superfood. So it’s no surprise this super seed gets its very own National Chia Day on March 23rd. Chia seeds come from a flowering plant in the mint family that’s native to Mexico and Guatemala. They’ve become a trusted staple for people around the world and can be enjoyed in many foods and beverages. In just two tablespoons, the mighty chia seeds contain 10 grams of fiber, omega-3 fatty acids, antioxidants, protein and minerals. When eaten dry, chia tastes a bit like a poppy seed. You can sprinkle them on salads, sandwiches, yogurt or in soup. Chia absorbs 9-12 times its weight in water and can make a delicious tapioca-like pudding. Or, use them to sprout into micro greens. They’re similar to alfalfa in taste and texture.
