Consumers Choice in Beef
The consumers choice for beef has changed dramatically in recent years. Grass fed. In the beginning grass fed meant a tough taste to this piece of beef, and buyers avoided it. It took time and effort but today grass fed has a new meaning.
Originally, grass fed meant nothing but pasture grass. It did nothing but feed the heard. Todays grass fed beef has the marbling that generates the taste, and the tenderness, that consumers want. What changed? Well, a lot.
Primarily the grass. Todays herd is kept in fields of various types of grass. This gives it the marbling in the various cuts. That marbling, which is essentially is fat, is what has changed the attitude about the grass fed.
It is also considered a healthier beef. This goes well with consumers, but, best of all, it is good for the man who grows it.
