Researchers Find Helpful Solution for Pickle Producers

The U.S. pickle industry faces growing environmental issues with disposing of the salty brining solution that turns cucumbers into pickles. But USDA Agricultural Research Service scientists have developed a way to help producers replace most of their pickling salt with calcium chloride, which helps cucumbers retain desirable firmness as they pickle and speeds up the fermentation process.
